Above Average Avocado Toast


I know what you’re thinking. Avocado Toast? Could I get more painfully basic? Is it 2015? Somehow since that year, avocado toast has made its way into the zeitgeist, and from the looks of it, this trend is here to stay. You see it everywhere. Every blogger, vlogger, and almost every other human bean has posted their own iteration of this beloved quintessential millennial meal. Like a true self-proclaimed “individual” (aka someone who hates the term hipster though has been accused multiple times of being one), my first reaction when this dish blew up was to flinch in disdain. It is not until last year that I really started to try this ”healthy” staple, and I haven’t looked back since.

Avocados are notorious for being “expensive“ here in the United States and there’s even this cultural derogatory dialogue surrounding the type of people who we assume have avocado toast every morning. Dialogues treading the lines of millennials not being able to afford houses anymore because of their obsession with avocado toast (CNN). Now, I’m all for saving, but is $5 for 4 avocados really that big of a deal? I don’t know about you, but I only ever need half the avocado per meal, so I always have leftover for the next. Besides, multiple studies have proven our favorite green fruit to have vast health benefits , some have even shown that eating avocados everyday decreases one’s risk of heart disease (WebMd). With this information, can’t one argue that investments towards our health will save us more money in the long-run in hospital bills? This is why I’ve officially stopped caring about stereotypes and started focusing on self-care and overall wellness.


I guess the point I’m driving at is avocado toast is the sh*t and we’re here for it! There’s so many ways to switch it up to make the perfect savory breakfast, lunch or snack, and it’s such an easy meal to whip up for meatless mondays, and a classic staple for going vegan. This is my personal recipe:

The best parts of this recipe are without a doubt, Trader Joe’s Everything But The Bagel seasoning (which I put on literally almost anything I eat these days) and the tomatoes. Ideally, the dream is to get cherry tomoatoes, but if you can’t find them at your local grocery, grape tomatoes work too. Add a pinch of salt, pepper, and a squeeze of lemon for that added punch and you have yourself an above average, not too basic avocado toast that’s both insta-worthy and tasty!
