Lazy Waffle + Life Lesson


Okay, I’m going to confess. I forgot that this was not completely vegan! Today you’ll find out just exactly how I cope with the challenge of maintaining Meatless Mondays. I was rushing through brunch to get to my long list of tasks for the day, that I am only now realizing as I’m writing this that I wasn’t supposed to use eggs! I’m truly sorry. I know I promised fully vegan content for Meatless Mondays so I’ve officially named my Monday reminder to “VEGAN POST!“ to prevent any further negligence on my behalf from now on. However, while I did use eggs in this, I still fully encourage you to try any substitute such as applesauce, mashed bananas, mashed chia or flax seeds, or anything listed in this specific link (click here).


Anyway, if you’re still reading this, THANK YOU. Thank you for giving me grace to sometimes make such a novice mistake such as this. If I had let myself get really upset about this whole thing, I could have just lied to you guys. I could have just claimed to have used an egg alternative but that simply did not sit well with me. One of the main things I aim for this blog to be above many things is transparent. I can accept that I can never be perfect, since perfect does not really exist, but I can always try. I can always try my best to stay true to what I believe needs to be said, what is actually the truth, and try to be as helpful and entertaining as I can to my readers. So again, I cannot say it enough, thank you for still supporting and following me through this relatively new journey. I’m sure I’m not the first person to have “cheated” on a vegan diet. I’m only really vegan on Mondays so I can only imagine how people who just made a daily change hold this up. But I also wanted to give myself a pat in the back to know and let you guys know that sometimes we will make mistakes and sometimes that in itself is okay. Without mistakes we can never truly learn how to be better and how to get back up after such a blow. So here you go: a life lesson from a lazy waffle post. You’re welcome.


Now, what you’ve all been waiting for—the recipe. It’s a bit weird for me to even call this my personal “recipe” since I just used bisquick, ice cream, and berries, and called it a day. The only thing I did that sort of strayed from the recipe was that I put the pancake batter through a waffle iron because well, I prefer waffles! I know that that can be a hot topic but like I said, I am serving y’all transparency in 2020!

Sometimes you just want an indulgent brunch without having to think about it too much. Today I wanted something quick, easy, and something I just knew would make the day brighter while still being (technically) meatless! Waffles and ice cream just always do that for me.
